Ingredients:

3 1/2 cups powdered sugar

1/2 cup butter, softened at room temp

1/8 tsp salt

1 large egg yolk

1 tbsp sweet milk (optional)

 

  1. Cream the butter until it's fluffy. Beat in sugar, salt, and yolk until mixture is creamy.
  2. Use the milk only if the mixture needs to be thinned out a bit.
  3. Flavor the mixture. Note from book: Butter cream frostings have a tendency to soften during hot weather. Whip in cornstarch if this happens to bring the mixture back to its consistency.

Vanilla Butter Cream: 1 tsp vanilla extract

Almond Butter Cream: 1 tsp almond extract or 1 tsp amaretto liqueur

Orange Butter Cream: 1 tsp orange liquer

Lemon Butter Cream: 1 tsp lemon extract

Rum Butter Cream: 1 tsp rum

Brandy Butter Cream: 1 tsp brandy or 1 tsp cognac

Cocoa Butter Cream: 1 tsp creme de cocoa

Coffee Butter Cream: 1 tsp strong coffee

Apricot Butter Cream: 1 tsp apricot brandy
